I have been as busy as ever...

I have been as busy as ever in the kitchen the last couple of weeks, and I thought I would share with you a few things that we are enjoying.

Homemade Applesauce: This is my first time making applesauce and I was so happy when I put up 10 quarts in the freezer! I have a *whole* lot more to freeze to last until next fall, but it is so worth it. William (14 mnths) enjoys peanut butter sandwiches with applesauce on the top. It is pretty much our go-to meal for him when we are eating something he doesn't care for.

Comeback Sauce: I had never made this before, but it looked like something I would like and it is great, especially with potatoes and grilled steak. Basically it is the homemade version of what you eat at steak houses with bloomin onions or onion petals. Because of the ketchup and chili sauce, it's not healthy but in small amounts I think it's ok for an occasional treat.

Homemade Vanilla Ice Cream: This recipe is soooo easy. Sometimes you just don't feel like lugging out the ice cream maker and dealing with the ice, salt mess! It calls for sweetened condensed milk, so I made my own. Did you know that sweetened condensed milk could actually be healthy? Because I left out the Oreo's to make plain vanilla ice cream, I added 1/2 cup sugar.

Broccoli Cheese Soup: This is an amazing soup. Really. Every child in this house and even my broccoli despising husband loved this soup. I was a little disappointed actually. I was excited to have the entire pot of soup to myself for a couple of days and it was gone in one meal. Bummer.

Butternut Squash: I had never made this vegetable before and I don't know why! It is SO good! Especially if you like sweet potatoes!

Garlic Salad Dressing: Always a favorite I try to keep in the fridge. The only salad dressing that my children like!

Frozen Hashbrowns: I can't tell you how excited I was to find this recipe. One of the keys for me to consistently provide healthy meals for my family is making my own convenience foods. These are a snap to make and freeze well.

Whole Wheat Chocolate Chip Cookies: While these cookies taste nothing like the squares of cookie dough you buy in the refrigerator section, they are good, healthy, and the children cleaned the platter! The only change I made to this recipe was to grind the oatmeal in the blender for a smoother texture.

Magical Peanut Butter Cookies: I make these cookies with sucanat and my husband said they are the best peanut butter cookie he has ever tasted. Hows that for rave reviews!? Eating healthy *can* taste good!

Pizza Casserole This is delicious and I can imagine would be great for a church fellowship. Paired with fresh bread and a saladoh my. Italian night here we come! I made this using whole wheat spaghetti noodles rather than the egg noodles and I used Newman's Own marinara sauce rather than Ragu. I also used store bought pepperoni, but I have found a recipe for homemade pepperoni that I am looking forward to trying for next time!

I am sure there is something I have forgotten, but this will give you plenty to peruse until next time.
